The naming of folders and CMake variables was not consitent. Folder, use singular for all folders, except `docs` to follow alpaka mainline. Rename CMake variable `alpaka_TESTING` into `alpaka_TESTS` to following nmaling of other variables e.g. `alpaka_BENCHMARKS`, ...

The naming of folders and CMake variables was not consistent.
It is better to unify the naming before the release, to keep the possible issues as low as possible.
