fix: improves the Rabbit MQ resouce customization to better handle unknown conditions

Updates the RabbitMQ Cluster customization so that the transient condition status "Unknown" for the operator's reconciliation conditions (ClusterAvailable / AllReplicasReady) maps to Progressing instead of Degraded.

This prevents short-lived Unknown -> True transitions from flipping application health to Degraded and causing false failures in tools such as argocd app wait --health.
