Description
This adds a simple datadog setup to demonstrate metrics and traces flowing from SpiceDB to the DD agent. This shouldn't require much modification once we have an official integration, either.

Add configuration and docker-compose.yml file for datadog traces
Testing
Review. See that you can run it and it works as expected.
