chore(samples): Update the liveness sample app to use the latest compose bom

Description of changes:
I've only updated the Liveness app for this change. Will update the Authenticator sample app in a follow up PR.

• Use the Gradle version catalog
  • Migrated dependencies that were in the sample app into the catalog
• Enabled desugaring and updated the Kotlin compiler version
• Updated the kotlin android plugin version to match what Amplify uses (or else it won't build)

How did you test these changes?
Launched the sample app and verified liveness still works with no regression
