Allow users to run locally the application and services without further configuration. There is also a change in the narrative of the .env file in the local setting. I changed the top comments to reflect that.
Later on this same concept will affect the positioning of scripts as a way to segregate environment but I think to not make too many changes in one go and keep moving, I leave the .env file as it is in the scripts and only change it for the local
The changes on this PR basically are inline with allowing the user to just get started without any need to read documentation or be familiar with the possible settings.
