Update MemryX section documentation

Proposed change

This PR updates the MemryX section of the documentation to point users to SDK 2.1 resources and adds guidance for compiling custom models, as the current MemryX setup requires SDK 2.1, even if newer SDK releases become available in the future.

Changes included:

• update MemryX SDK links to the 2.1 documentation
• add a custom model compilation section, including a compiler example command

Will merging this PR into dev also update the public docs at https://docs.frigate.video/, or is a separate docs PR needed for a different branch or repo?

These changes are documentation-only and do not modify Frigate runtime behavior.
