Adds a dataset based "simulator" to perform diffraction over a known wafer dataset. The simulator is structured as an ophyd object with 3 readable components, where the read values are dependent on the values of 2 soft positioners.
This opens the door for testing Bluesky-adaptive workflows that do something beyond mocks, and are expected to examine some scientific data.
