This PR updates the list of versions of the lesson software that installed in the conda environment, and provides updated conda spec files that are also fit for Ubuntu 24. Pending acceptance of carpentries-lab/metagenomics-workshop#27, there will also be a new AMI image with all of these preinstalled.
