Class updates: add wind, piecewise lapse rate, and time-dependent surface fluxes + various QOL improvements

Varnavas reference configuration can be loaded by running local dev server and selecting varnavas from presets

Note: I've added Varnavas reference config, but some parameters were not provided in example config. I've added the following defaults:
