[Docs Site] fix: formatting checks

Summary

Previously, the action when checking formatting was running --write --check, which resulted in files being fixed, then checked, so nothing was ever flagged as being formatted incorrectly.

This fixes up the package.json scripts to resolve that, and then fixes a few minor formatting things in a few flagged files.
