chore: Upgrade vitest

Upgrades vitest, @vitest/coverage-istanbul and @vitest/eslint-plugin by running

npm i --save-dev vitest@^3.0.7 @vitest/coverage-istanbul@^3.0.7 @vitest/eslint-plugin@^1.1.36

and this in turn upgrades esbuild to ^0.25.0.
