docs: point related-projects console link at console-rs

Summary

• Update the "Used by delta" related-projects entry from mitsuhiko/console to console-rs/console.

Motivation

The manual still linked the pre-transfer GitHub path. GitHub 301-redirects mitsuhiko/console → console-rs/console; point the manual at the canonical org so the link stays correct if the temporary redirect goes away.

Verification

• curl -sI https://github.com/console-rs/console → 200
• Cargo still depends on the console crate (name unchanged); docs link only
• No open PR touches manual/src/related-projects.md

One-line manual link update in manual/src/related-projects.md — no Rust changes.

If Clippy fails under cargo clippy -- -D warnings (rustc 1.97), the same five mainline sites show up without this PR (side_by_side.rs:249, diff_header.rs:296, merge_conflict.rs:223, options/set.rs:590, wrapping.rs:53). Happy to open a separate Clippy cleanup when those files are freer of open code PRs.
