chore: migrate away from next-auth to better-auth

next-auth, it's time to say goodbye to Seleneo. we thank you for your service, but you gotta go. this PR completes that.

• replaced next-auth with better-auth for less headaches improved authentication handling
• updated prisma schema to support better-auth
• removed all next-auth dependencies and session provider
• refactored api routes and components to use better-auth's auth client
• updated docker-compose to use env variables for database credentials and sticky v15
• improved community page ux and auth state rendering in navbar
• updated legacy catch-all route to support our new dependency
