PR Summary

Bulk update to DBT models to hide curated datasets from exposure.

• Replaces post_hook calls of expose_spells(...) with hide_spells() across numerous models (projects, sectors, and blockchains: e.g., EigenLayer, Uniswap, Airdrops, Labels, Gas, Inscription, Social, RWA, NEAR, etc.)
• No query logic, schemas, or materialization strategies changed beyond minor config formatting; existing unique_key, partitions, and incremental predicates remain intact
