This sounds really yummy! I had one improvement idea though, to keep dummies like me from making mistakes.
| - Boil potatoes until tender, then mash | ||
| - Fry chopped onion in butter until golden, add half to mashed potatoes | ||
| - Mix in cheese, salt and pepper to the potato mixture | ||
| - Combine flour and salt, make a well, add egg and water |

As this is no more about the filling in the previous steps, maybe it could say "Combine flour and salt in a separate bowl": people often just glance recipes, and this could prevent someone from mixing the dough ingredients with the filling.
