Context

This change aims to standardize Kubernetes-supported versions across various pieces of documentation.

Implementation details

Document Kubernetes version compatibility as in https://github.com/elastic/cloud-on-k8s#elastic-cloud-on-kubernetes-eck.

The referenced github document mentions 1.29-1.33, and this change aims to leave 1.28-1.33.
Should we change the 1.28 too?

This should be updated with the next ECK release: https://github.com/elastic/docs-content/pull/2019/files

We do not retroactively test newer versions of Kubernetes against already released versions of ECK. ECK 3.1 is the first release to be tested on 1.33

I initially created this PR thinking it was an inconsistency, but seeing that this is expected and will soon be changed, I'm closing this PR.
