This reverts PR #126080, which made the lucene 10.1 postings format the default.
Since the change, nightly benchmarks have shown minimal improvements and, in some cases such as the
http_logs-4g-term-latency, large regressions.However apache/lucene#14445 might be the root cause, so we'll wait to merge this PR until that's fixed.
