[filebeat] Add flag to optionally mount the Docker socket

• Chart version not bumped (the versions are all bumped and released at the same time)
• README.md updated with any new values or changes
• Updated template tests in ${CHART}/tests/*.py
• Updated integration tests in ${CHART}/examples/*/test/goss.yaml

Starting in Kubernetes 1.24, dockershim support will be completely removed. Mounting docker socket should be only mounted on demand using a flag value in the helm chart, which is set to true by default for backwards compatibility.
