this PR cleans up a few miscellaneous things in the Fluent Bit docs repo.
I also thought I'd be able to remove the
monitoringfolder (which contains two files, neither of which are documentation pages:alerts.yamlanddashboard.json), but it turns out there's a doc that points at these files by linking to their location in the repo itself. so I couldn't delete those, but while I was looking at them I did update the links to at least point at the most current version of each.
