I'm a little hesitant to introduce this by default for everybody, not because it's not a good idea, just because my capacity to test stuff at the moment is pretty low. So what I'll do is get you and @rohanpower to test it using npx https://pkg.pr.new/mcp-remote@131?

I think I could merge this right away if the undici injection was conditional, only activating if a --enable-proxy flag was set? In future it might make sense to just have this in all the time but I don't want to risk breaking it for anyone when I don't have a lot of time to fix it.
