test: update snapshots and cassettes

@another-rex I'm wondering if we split out the "update snapshots" and "update cassettes" jobs, since it is still possible for the snapshots to change without the cassettes changing, and those should now be a smaller diff so easier to land 🤔

I'm thinking cassette + snapshots, and just snapshots.
