Development/Test environment improvements

This PR:

• Removes a large number of unused files from a previous version of this application - specifically files related to directly interacting with the OpenAlex API rather than the data snapshot.
• Adds test coverage, mainly for model relationships and for GraphQL queries and entry points.
• Adjusts model relationships with more explicit primary/foreign key naming where necessary.
