[DDW-1220] Update cardano-node to 8.1.1 (via cardano-wallet)

This PR updates cardano-node to 8.1.1

• cardano-wallet PR is merged: [ADP-2956] Upgrade cardano-node to 8.1.1 and ghc to 9.2.8 cardano-foundation/cardano-wallet#4003 (which supersedes Upgrade cardano-node to 8.1.1 and ghc to 9.2.8 cardano-foundation/cardano-wallet#3996 by squashing)
• cardano-wallet tag v2023-07-18 is made – https://github.com/cardano-foundation/cardano-wallet/releases/tag/v2023-07-18
• cardano-wallet release is made https://github.com/cardano-foundation/cardano-wallet/releases
