The `release.yml` workflow is updated to trigger on `release: types: [published]`. This allows creating releases through the GitHub UI. The workflow is simplified to only set the project version and deploy to Maven Central. The logic for creating git tags, branches and pull requests is removed as this is now handled by the manual release process.
