Here you can find out all about the citizen science project studying Kombucha. We're a collaboration of several labs, working together to better understand everyone's favorite vinegary beverage.

Here at the Kombucha Genomics Project, we are working to better understand the organisms that comprise the microbiomes of several types of kombucha, from home-grown cultures to store-bought bottles. Using techniques such as isolating cell cultures and DNA barcoding, we are discovering more about the microorganisms in the SCOBY of a kombucha etc etc etc.
