chore: update lance dependency to v2.0.0-rc.3

Summary

• Bump Lance crates to 2.0.0-rc.3 and align Arrow/DataFusion pins to 57.0.0 / 51.0.0.
• Add [patch.crates-io] overrides to use the lance-format/lance repo at the v2.0.0-rc.3 commit for the lance* crates.
• Refresh Cargo.lock with the updated resolver graph.

Resolver changes

• Overrides via [patch.crates-io] for lance, lance-arrow, lance-core, lance-index, lance-linalg, lance-namespace, lance-namespace-impls, and lance-table pointing to https://github.com/lance-format/lance at rev ad5e7c089e883c5fd503714c617aa7249fdf0cca (refs/tags/v2.0.0-rc.3).
• Arrow/DataFusion dependency graph updated to 57.x / 51.x to match Lance 2.0.0-rc.3 requirements.
