feat: Update Android Gradle plugin to 8.1.0

Background

• To stay consistent with other platforms and the core SDK, we’re updating the Android build tools.
  Using the same tooling versions helps keep builds reliable, compatible, and consistent across the SDKs.

What Has Changed

• Updated the Android Gradle Plugin to version 8.1.0
• Aligned Android build tooling with the core SDK and other platform SDKs
