Background

  • I was seeing several fails in CI related simulator not being seutp
  • I made this change in another PR but for easier review I'm opening this PR
  • Tested the workflow 4 times and unit tests were started correctly each time (1 fail occurred after simulators were setup)

  • Change the way Xcode version is setup
