Instructions:
Mix the flour, milk, eggs, and a pinch of salt in a bowl until the batter is smooth. Heat a non-stick pan over medium heat and melt a small amount of butter or oil. Pour a ladle of batter into the pan, swirling it to spread evenly. Cook until the bottom is golden, then flip and cook the other side until golden as well. Serve warm with your choice of toppings.
Salty Variation:
For a savory twist, omit the sugar and add 100g of grated cheese (e.g., cheddar or feta) and 50g of cooked and crumbled bacon or ham to the batter. Serve warm with sour cream or a dollop of crème fraîche on top.
