fix: Update Env Model Verion and Open AI Model Version

This pull request updates the Azure OpenAI API version and related configuration parameters in both the deployment workflow and documentation to align with the latest API version and model specifications.

Updates to Azure OpenAI API version and model configuration:

• .github/workflows/deploy.yml: Updated the azureOpenaiAPIVersion parameter from 2024-05-01-preview to 2025-01-01-preview in the deployment workflow.

• docs/CustomizingAzdParameters.md: Updated the AZURE_ENV_OPENAI_API_VERSION to 2025-01-01-preview and the AZURE_ENV_MODEL_VERSION to 2025-04-14 in the documentation to reflect the new API and model version. Removed outdated allowed values for these parameters.## Purpose
