Going through https://github.com/mongodb-js/charts-embed-sdk/security/dependabot most of these vulnerabilities come from dependencies of dependencies. As a start to resolve these, I've decided to update our parcel package from v1 to v2.
The steps to migrate parcel were taken from https://parceljs.org/getting-started/migration/
Each SDK example builds and runs correctly.
