Update APIs to match cert-manager deployed via helm. Remove reference to what was maybe a Helm/Tiller type deployment. Add issuers we created to get certificate signing working again in production. Where possible we used a namespace issuer instead of a cluster issuer.
Interestingly enough, some of these deployments have ingress in their namespace but are actually using a cluster wide ingress-nginx.
