feat: migrate project to mysqljs organization

Before sidorares/node-mysql2#4054 conclusion, I adapted the repository according to the organization's standards, including links, references, license, etc.

• I included some documentation explaining why this project exists as part of mysqljs.
• While it was under my profile, I used Codecov to generate the coverage report. I'll explore the options here.
