Use prefix in ENSEMBLVEP_VEP output channel globs

Per the warning in the docs input files may be copied back to workDir if they match an output channel glob even if they are task inputs and not in the actual output channel.

This can increase copy times and disk usage so it's better to be specific and use the prefix in the output glob where possible.
