Remove UI-related progress tracking from documentation

Removes all UI layer implementation progress from README and PROGRESS documentation per maintainer request to focus on backend protocol and runtime concerns.

Changes:

• README.md: Removed "UI Metadata Layer: 40%" status line
• PROGRESS.md:
  • Deleted Section 8 "Presentation Layer (UI Metadata)" covering Page/View/Form/Report metadata (~78 lines)
  • Removed Studio visual editor tooling section
  • Removed UI-related roadmap items (Form/View/Report type definitions)
  • Removed *.page.yml, *.menu.yml, *.form.yml, *.view.yml, *.report.yml from file naming conventions
  • Updated implementation status table, specification tracking, and conclusion to reflect backend-only scope
  • Renumbered subsequent sections 9-14

Impact:

• Overall completion remains 70% (focuses on Core, Drivers, Workflow)
• Documentation now aligns with ObjectQL's role as protocol layer, not presentation layer
