OpenTelemetry is no longer needed. This removes: - server/open-telemetry.ts instrumentation module - All @opentelemetry/* and opentelemetry-instrumentation-sequelize dependencies - Configuration entries in default.json and custom-environment-variables.json - Documentation (docs/opentelemetry.md and environment_variables.md entry) - Renovate package rule for @opentelemetry/**
