- build: Upgrade to Node 24
- Re-build package-lock.json in node 24.
- build: Clean up how we build/release.
This necessitated overriding node-gyp, a transitive dep from node-sass (itself deprecated in October 2020), to a more recent version. package-lock was regenerated.

Ah, so that's what my package-lock regen was behaving rather weirdly. 👍🏼
Simplify the release workflow and remove unnecessary dependencies from the dev dependencies.
