(feat) O3-4429: Add demo data from the refapp

This PR adds the configurations for the demo metadata from the ref app.

@NethmiRodrigo when setting up O3, what exact steps would i need to take advantage of this demo data package?

@dkayiwa we'd have to publish a maven artifact by creating a bamboo plan and merge this in, and then we'd have to add this content package to the ref app's content.properties file (similar to how we did with the other ref app content package)
