[Release 3.0.0] Bump Version 3.0.0.0-alpha1 and and updated shadowPlugin

• Updated opensearch_version from '3.0.0' to '3.0.0-alpha1'
• Migrated shadow plugin from 'com.github.johnrengelman.shadow' to 'com.gradleup.shadow'
• Updated test-and-build workflow to use macOS runner (previously Ubuntu)
• Updated Jacoco version to '0.8.12'

Will not bump to use JDK23 until detekt/detekt#7988 support.

We will ignore the docker test now as it seems not pulling the qualifier version.

Approve based on the pass test on assemble and bwc.
