Pre-check var shapes in dataset difference

Fixes for dataset-difference problems, discovered during development of #120

• var shapes should be pre-checked, as well as dims, to avoid failed data comparisons
  • (including, presumably the non-broadcastable error which is new behaviour in numpy v2) -- cf Bugfix array equality SciTools/iris#6665
• shape calculation must allow for empty data
