This was a originally a stale PR, couldn't open it back up for some reason so put fix into a new PR

Solves this issue. Essentially makes it easier to build out the planned clai serve [--protocol] command while still allowing the CLI to defualt to the (current) clai [prompt]

@assadyousuf Thanks Assad. As it happens, just this week we started working with the creator of rich and textual on a rewrite of clai, so we're going to hold off on changes until that lands. I'll leave this PR as a draft and we can see if it makes sense to update for the new implementation then.
