Update log Gaussian Cox process notebook

This PR updates the LGCP notebook for modeling marked point data to conform to the style guide and compatibility with v5.

Relevant issues: #723 #57

• Notebook follows style guide https://docs.pymc.io/en/latest/contributing/jupyter_style.html

I used mp_ctx="spawn" for pm.sample to work around an error from sampling multiple chains on a Mac. It wasn't clear to me if this was acceptable for the docs or if there's a preferred solution/workaround.
