Update interrupted_time_series.ipynb for PyMC v5 and Pandas compatibility

• Replace pm.MutableData with pm.Data for PyMC v5 compatibility.
• Update pd.date_range(freq="M") → pd.date_range(freq="ME") to avoid Pandas deprecation warnings.

• Notebook follows style guide https://docs.pymc.io/en/latest/contributing/jupyter_style.html
• PR description contains a link to the relevant issue:
  • a tracker one for existing notebooks (tracker issues have the "tracker id" label)
  • or a proposal one for new notebooks

Everything looks great, can you rerun the notebook after installing watermark on that environment? This will ensure we keep the list of versions used present and up to date. You can also update the call to

watermark -n -u -v -iv -w -p pytensor,xarray

aeppl is no longer a dependency (implicit or otherwise)

Reran the interrupted_time_series.ipynb notebook in the pymc-examples environment, updated the watermark cell, and ensured all cells are executed sequentially. The notebook and .myst.md are now up-to-date. Ready for another review.
