Add support for Python 3.13 3.14 3.14t so we can use sniffio with newer Python runtimes.

The failing check is irrelevant because I'm not modifying documentation.
Pending checks will never resolve because I'm removing 3.7 support. 3.7 is EOL-ed in 2023H1 so it's safe to remove. We ought to remove everything under <=3.9 though, since they're EOL-ed already.

This seems like a duplicate of #53

I think the implementation of #53 is better, but I'll leave this PR open for visibility
