operator/chart: remove --configurator-tag override#680

In previous release an override of `--configurator-tag` was added due to a bug in how versions were being stamped into the operator binary. Once the bug was fixed, the override was forgotten. This commit removes the override now that the default value of using the internally stamped version works (and we found the override).
