  1. Rework the test.sh file. Now it's much easier to see the targets and the features enabled.
  2. Update CI workflows to build some features we weren't building

- Let the rust-toolchain.toml file control how the examples are built
- Add some features we weren't testing
- Drop the big-endian targets that we cannot test in QEMU
