Massive update to CI/CD, replace pip with uv for 10-100x speedup, where possible. Can't use uv for pytest_matrix because Qt doesn't have prebuilt wheels for every platform, and uv is very strict about this.
Fix broken document links in newly-updated SDynPy documentation.
Remove requirements.txt references, in favor of pyproject.toml.
