Migrate PCB to ESP32-S3

Changes

ESP32-S3-WROOM-1U-N8R8 || N8R16

• Reason: the S3 variant provides larger PSRAM, which is not available in the ESP32-S3 MINI version
• The 1U version has no external antenna - it is more compact, but still requires a small cutout in the enclosure to fit properly

Removed CH340C and UMH3N

• ESP32-S3 has built-in USB support, making the external USB-UART converter and transistors unnecessary

Minor cosmetic improvements to PCB routing

Review request:

• Is this approach correct for the project?
• Would this change be suitable for initial testing with the new module?
• Did I overlook any critical mistakes that might cause the board not to work?
