fix: add explicit node-gyp-build install script and update peer dependency to ^0.25.8

- npm was auto-detecting binding.gyp and adding 'node-gyp rebuild' install script - explicitly add 'node-gyp-build' to use ONLY prebuilt binaries - update peer dependency to @sengac/tree-sitter@^0.25.8 - never build from source on target machines
