I think it'd be helpful for folks to be able to find storage requirements faster.

I considered putting the default sizes from postgres and valkey explicitly in the readme, but that seems like it would just become stale eventually.

This would be best to put either in the README.md in the root level of this repo, or we can use a template for this readme, as the README in that directory is autogenerated via helm-docs. If I accept this PR as is, it will be overwritten the next time I do a commit, as locally, I always run helm-docs before finalizing a PR so that the docs remain up to date.
